Avocado Toast with Fresh Tomato

For each serving:

1 slice of toast, preferably whole grain

1/2 of a firm, ripe avocado, seed removed, sliced

2 slices fresh tomato

Mash avocado slices on the piece of toast. Sprinkle with sea salt. Add tomato slices. Sprinkle with sea salt. For breakfast, sandwich a fried egg between the smashed avocado and the tomato slices.

Other topping ideas for avocado toast:

Fresh pesto

Fresh salsa

Crumbled bacon

Crumbled goat cheese drizzled with honey

Sunflower seeds

Thinly sliced red onion

Hot pepper jam

Thinly sliced radishes

Finely chopped sweet red peppers and green onions

Mashed leftover roasted vegetables
