Hidden Surprise Peanut Butter Cups

15 ounces of dark or milk chocolate morsels, chopped, divided in half
1 cup creamy peanut butter
1/2 cup sifted powdered sugar
1-2 bananas, sliced about 1/4 inch thick

Place half the chocolate in a 1-quart freezer-strength zip-top bag and place in a deep bowl or pot filled with hot water. Let it sit until the chocolate is completely melted. This will take about 15 minutes.

While chocolate is melting, use an electric hand mixer to blend peanut butter with powdered sugar. Beat until smooth and creamy. The mixture will be thick.

Arrange mini cupcake liners on a baking sheet or in a mini muffin tin.

Snip one corner of the zip-top bag and carefully squeeze a thin layer of chocolate into the bottoms of the liners. Lightly tap the pan several times to flatten the chocolate. Place a teaspoon of peanut butter mixture on top of chocolate. Tap the pan on the work surface again. Place in refrigerator for about 10 minutes, or until chocolate has become firm.

While the candy is chilling, place remaining half of chocolate morsels in a freezer-strength zip-top bag and place in bowl of hot water to completely melt.

Remove candy from refrigerator. Top each with a banana slice.

Snip a corner of the bag of melted chocolate and carefully top each banana slice with chocolate, covering the banana completely to seal. Refrigerate. Store in refrigerator in covered tin or container. Makes 24 to 28 peanut butter cups.
