Zesty Broccoli Sesame Noodle Bowl

1/2 pound uncooked ramen, linguine (or any noodles, such as rice noodles, soba noodles, lo mein noodles)
1/2 cup chopped raw almonds
2 tablespoons coconut oil or grape seed oil
3-4 cups small broccoli florets (about 1 medium head of broccoli)
4 cloves garlic, peeled and coarsely chopped
salt and pepper
1 batch Sesame-Soy Vinaigrette (see below)
optional garnishes: chopped chives, sesame seeds, coarsely-ground black pepper, crushed red pepper flakes

SESAME-SOY VINAIGRETTE INGREDIENTS
1/4 cup soy sauce or tamari sauce
2 tablespoons rice wine vinegar
1 tablespoon sesame oil
1 tablespoon honey
1/2 teaspoon freshly-cracked black pepper
1/2 teaspoon ground ginger
1/2 teaspoon sriracha

Heat a large pot of water to boiling. Add noodles.
While noodles are cooking, melt 1 tablespoon coconut oil in a deep pan over medium high heat. Add chopped almonds and stir until toasted. Immediately transfer almonds to a plate and set aside.
Return pan to heat. Add 1 tablespoon coconut oil. When heated, add broccoli and stir-fry for 5 to 7 minutes, until tender crisp.
While broccoli is cooking, prepare vinaigrette by whisking all ingredients together In a glass measuring cup. Add garlic to pan of broccoli during the last 2 minutes of cooking and stir-fry.
Drain noodles. Put back in the cooking pot. Add broccoli and garlic. Stir to mix. Add some vinaigrette to coat all of the ingredients. Stir in toasted almonds.
To serve, transfer noodle mixture to serving bowls. Sprinkle with garnishes of choice. Makes 2 servings.
