Sweet and Spicy Roasted Butterkin Squash
1 1/2 to 2 pound butterkin squash or winter squash of your choice
2 tablespoons olive oil
1 tablespoon curry powder, chili powder, or your favorite spice blend
1 tablespoon brown sugar
1 teaspoon sea salt
Pepper, to taste
Preheat oven to 375 degrees. Line a rimmed baking sheet or cast iron pan with parchment or foil.
Cut butterkin into 4 pieces. Remove seeds. Place in prepared pan.
In a small bowl, mix oil, spice blend, brown sugar and salt until well blended. Use a pastry brush to generously coat all cut sides of squash with spice mixture.
Bake squash in preheated oven for 45 to 60 minutes, until fork easily slides into squash flesh when poked. Remove from oven. Sprinkle with pepper. Serve hot. Makes 4 side servings.
