Good Food, Good Life, 365 – Potatoes and Greens with Avocado

Potatoes and Greens with Avocado

2 red new potatoes
1/2 of an avocado
1 squeeze fresh lemon juice
Pinch of salt
3 cups baby arugula or chopped romaine
1 bunch green onions, sliced
Salt and freshly ground pepper, to season

Put a steamer basket in a medium saucepan with a few inches of water. Bring water to a boil. Place potatoes in steamer basket. Cover and steam until tender, about 10 to 15 minutes. Remove from heat. Place potatoes on a plate to cool a little bit. Cut into bite-size chunks when they are cool enough to handle.

Scoop avocado into a medium bowl. Add lemon juice and pinch of salt. Mash with a fork or pastry cutter until creamy texture is achieved. Add greens. Toss to coat.

Add potatoes and green onions. Season with salt and pepper. Serve immediately. Makes 1 serving.
