Good Food, Good Life, 365 – Quick No-Cook Fresh Tomato Soup

3 medium tomatoes, cut into chunks
1/4 cup water
1 clove garlic, smashed
1/2 of a ripe avocado, chopped
1/2 to 1 teaspoon Italian seasoning (salt-free) or 1 tablespoon minced fresh basil or dill
1/4 teaspoon salt
1 teaspoon extra-virgin olive oil
Fresh basil or dill, for serving

Put tomatoes, garlic and water into blender. Puree until smooth. Add avocado, seasoning, salt and olive oil. Puree until smooth. Taste for seasoning, and adjust as needed. Pour into small serving bowls. Garnish with a sprig of fresh basil or dill. Serve at room temperature. Serves 2 to 4.
