Overnight Super-Power Oatmeal
2 large, ripe bananas, peeled and mashed well
2 medium carrots, peeled and finely grated
1 cup rolled oats
2 1/4 cups milk of choice
1 to 1 1/2 teaspoons cinnamon, to taste
Dash of salt, if desired
On a plate, use a fork to mash the bananas until almost smooth. Scrape into a medium bowl.
Using the fine grate holes on a box grater, grate the carrots onto the plate. Place into the bowl with the mashed bananas and stir to blend.
Add the rolled oats, milk, cinnamon and optional dash of salt to the bowl. Stir well until combined. Cover tightly and place in the refrigerator to store overnight.
In the morning, remove oat mixture from refrigerator. Spoon the amount you want for breakfast into a saucepan. Warm up over medium heat. If the mixture is a bit too thick, add a little more milk.
Enjoy with your favorite toppings, such as chopped dried fruit, hemp seeds, chia seeds or nuts. Leftovers will keep in the refrigerator in an air-tight container for up to 2 days.
