Good Food, Good Life, 365 – Honey-Sweet-and-Salty Popcorn

Honey-Sweet-and-Salty Popcorn

2/3 cup popcorn kernels
1 to 2 tablespoons coconut oil or oil of your choice
1/4 cup butter
2 tablespoons mild-flavored local honey
Salt

Put oil and popcorn kernels in a large, heavy pot. Turn heat to high. When your hear the first kernels pop, move the lid slightly to leave a space for steam to escape. Allow popcorn to pop. Do not shake the pot.

While popcorn is popping, melt butter in a small saucepan. Remove from heat. Stir honey into melted butter and continue to stir until honey melts.

Dump popped corn into large bowl. Drizzle with honey-butter mixture. Shake the popcorn so it is all coated with the butter mixture. Salt to taste.

Eat and enjoy! You’ll think you are eating kettle corn.
