On-The-Go Granola Bars

1 cup sesame seeds
1 cup sunflower seeds
1 cup coconut flakes
1 cup slivered almonds
1 cup dried fruit, chopped
1/2 cup coconut oil
1/2 cup brown sugar
1/4 cup honey
1/4 teaspoon salt
1 teaspoon pure vanilla extract, optional

Preheat oven to 325 degrees.
Line a 9- x 13-inch pan with parchment paper, using enough so the edges come up over the top and can be used as handles to pull cooled granola bars out of the pan.
Put sesame seeds, sunflower seeds, coconut flakes, slivered almonds and dried fruit into a large mixing bowl. Stir to mix.
In a small saucepan, melt coconut oil, brown sugar, honey and salt together, until brown sugar is dissolved and mixture is smooth.
Pour honey mixture over the mixture in the bowl and stir will to coat all of the ingredients with sauce.
Pat mixture into prepared pan. Bake in 325-degree oven for 20 to 25 minutes. After 10 minutes, stir the mixture and pat tightly back down into pan. When coconut is golden and the top of the bars are beginning to turn brown, remove from oven. Allow to cool in pan.
When bars are cool, pull out of the pan and cut into bars. Makes about 25 granola bars. Store in ziptop bags or wrap each one in plastic wrap.
