High Energy Sweet Potato Soup
1 tablespoon coconut oil
1 large onion, chopped
5 cloves garlic, minced
1 teaspoon sea salt
2 medium-large sweet potatoes, scrubbed and cut into chunks
3 cups water
2 cups fresh spinach leaves
1 cup fresh cilantro
1 tablespoon fresh lemon juice
dash of cayenne pepper
Saute onion in hot oil in a large pot for about 5 minutes, or until onion is tender. Add garlic and saute another 2 minutes. Add sweet potatoes and stir. Pour in water. Bring to a boil. Reduce heat, cover pot, and cook until sweet potatoes are very tender, about 15 minutes.
Use a hand blender to puree mixture a bit. Add spinach and cilantro and blend until greens are chopped. Do not puree the soup until smooth. Leave it a bit chunky.
Stir in lemon juice and cayenne. Serve hot.
Makes 6 to 7 cups of soup.
