Good Food, Good Life, 365 – Eggs in Avocado Boats
- For 2 servings:
- 1 avocado, cut in half, pit removed
- 2 eggs
- Salt and pepper
- Garnish of choice
Preheat oven to 425 degrees. Scoop out a little of the avocado from the center to make more room for the egg. Place avocados in a small baking dish.
Crack an egg into a small custard cup. Gently pour into an avocado half. It may spill out into the dish. Do the same thing for the other half of avocado.
Bake in preheated 425-degree oven for about 20 minutes for a firm yolk, less time for a softer yolk. Remove from oven. Sprinkle with salt and pepper. Top with garnish of choice: chopped tomatoes, chopped parsley, chopped bell peppers, shredded cheese.
Use the avocado you removed from the center to spread on your toast.
