Good Food, Good Life, 365 – Curried Cauliflower Sauce
Curried Cauliflower Sauce
1 to 2 tablespoons organic, unrefined coconut oil or oil of your choice
1 large onion, chopped
2 cloves garlic, minced
1 1/2 teaspoons grated ginger root
1 tablespoon curry powder, or to taste
1/4 teaspoon cayenne
1 large head of cauliflower, chopped
2 cups water
1 cup salsa or crushed tomatoes
1 Serrano pepper
Sea salt, to taste
Lemon juice, to taste
Sauté onion until just beginning to turn brown. Add garlic, ginger root, curry powder, and cayenne.
Add cauliflower, water and crushed tomatoes or salsa.
Cut serrano in half lengthwise and stir into sauce. Bring mixture to a boil. Reduce heat, cover and simmer until tender.
Add sea salt and lemon juice. Taste and adjust seasoning as necessary.
Makes 4 to 6 servings.
Sue’s Tips:
This is delicious served over brown rice or cooked millet.
This is a great dish to use up leftover roasted or baked chicken. Just make the sauce without the cauliflower. Stir in chopped, cooked chicken and heat through.
