Creamy and Crunchy Fresh Broccoli Salad

1 tablespoon wholegrain mustard
1 tablespoon sherry vinegar
3 tablespoons extra-virgin olive oil
Salt and pepper, to taste
1 head broccoli, cut into tiny, bite-size trees
1 ripe avocado
handful roasted and salted sunflower seeds

Combine mustard, vinegar and olive oil in a salad bowl. Season with salt and pepper, if desired.
Cut avocado in half, remove pit and use a small spoon to scoop bite-sized chunks into the dressing. Whisk the ingredients together to create a creamy dressing.
Add broccoli and mix. Add a handful of sunflower seeds and toss to distribute evenly.
Makes 3 to 4 servings.

Sue’s Tips
Chopped, roasted almonds can be used instead of sunflower seeds. To eliminate nuts altogether, use chopped sweet red bell pepper.
Any of your favorite vinegars can be used in the dressing. Fresh lemon juice works, too.
