Creamy Coconut-Ginger Oatmeal

1 (13.5-ounce) can coconut milk
2 cups water
1 cup steel-cut oats
1/4 teaspoon ground ginger
1/8 teaspoon kosher salt
Bananas, slice, for serving
Honey, for serving

Pour coconut milk and water into a medium-size pot. Bring to a boil over high heat. Stir in steel-cut oats, ground ginger and salt. Turn heat down. Allow mixture to simmer, uncovered, for 20 to 30 minutes, until desired consistency is achieved. Serves 4 to 6.

Sue’s Tip
The cooked mixture, once cooled slightly, can be refrigerated, without toppings, in a tightly-sealed glass container. It will get thick in the refrigerator, so the addition of liquid might be in order when you heat up the chilled oatmeal.
