Chocolate, Banana, and Peanut Butter “Ice Cream”
2 large bananas, sliced, or 2 cups of banana slices
1/3 cup creamy peanut butter
2 tablespoons unsweetened cocoa powder
1/2 teaspoon pure vanilla extract
a pinch of salt
Freeze banana slices at least 6 hours or overnight. Put all ingredients in food processor. Pulse and continue to scrape down sides of work bowl as you go until mixture is creamy. Scoop and eat immediately or scrape frozen mixture into a tightly sealed glass container and store in freezer for up to 5 days. Makes about four 1/2-cup servings.
