Good Food, Good Life, 365 – Chickpea Croutons

Chickpea Croutons

1 (15-ounce) can chickpeas, or 1 1/2 cups cooked

1 teaspoon extra-virgin olive oil

1/2 teaspoon garlic powder

1/2 teaspoon fine grain salt

Preheat oven to 425 degrees. Line a jelly-roll pan with aluminum foil.

Drain chickpeas in a colander and rinse with water. Dump the chickpeas onto a clean kitchen towel and gently rub dry. Transfer dry chickpeas to prepared pan. Drizzle with 1 teaspoon olive oil. Shake the pan to roll the chickpeas so they get coated with oil. Sprinkle with garlic powder and salt. Shake pan again. Bake in preheated oven for 20 minutes. Shake pan and bake another 10 to 15 minutes, until chickpeas are golden. Immediately transfer to a large plate and allow to cool. The roasted chickpeas will get crispy as they cool.

Use as croutons on fresh green salads. Or, eat them as a snack.
