Cacao Nib Valentine Treats

1/2 cup raw almonds

1/4 cup old-fashioned rolled oats

1/4 cup dates, pitted

1 tablespoon honey

3 tablespoons cacao nibs

1 teaspoon vanilla extract

1 teaspoon almond extract

1/8 teaspoon salt

 

Place almonds and oats in bowl of food processor and process until finely chopped. Add dates and honey and process until mixture begins to hold together. Add nibs, flavorings and salt and process until well combined.

Line a bread pan with waxed paper. Pat the nut mixture in an even layer into the bottom of the pan. Refrigerate for 20 to 30 minutes.

Pull mixture from pan with waxed paper. Use a small heart-shaped cutter to create valentine treats. Or, shape the mixture into small balls.

These can be eaten immediately. They will stay fresh for at least 2 weeks in a sealed container in the refrigerator. They also freeze well.
