Good Food, Good Life, 365 – Broiled Sugar Snap Peas

Roasted Sugar Snap Peas

Fresh sugar snap peas, as many as you need

Extra-virgin olive oil, just enough to lightly coat each pea pod

Sea salt

Position the oven rack to highest level. Preheat the broiler. Line a rimmed baking sheet with aluminum foil.
Rinse and trim the pea pods. See the video for trimming instructions.

Place trimmed pea pods on the prepared baking sheet. Drizzle with olive oil. You will want just enough olive oil to coat the pods when you toss them up.

Arrange the oiled pea pods in a single layer on the baking sheet.

Place under the broiler. As soon as the pods begin to get some brown spots, stir them up and once again arrange them in a single layer.

Remove from oven when the pods are spotted with brown. The whole process will take just 2 or 3 minutes.

Remove from oven. Sprinkle with sea salt. Serve.

Sue’s Tips

Sugar snap peas are a good source of fiber and vitamin C. An added plus–they are low in calories.

Make extra Roasted Sugar Snap Peas to toss into a pasta dish the next day.
