Good Food, Good Life, 365 – Baked Tomato and Zucchini Pasta

Baked Tomato and Zucchini Pasta

For 2 servings:
1/4 cup olive oil
1 heaping tablespoon local honey
Tomatoes, cut to bite-size pieces
Zucchini, cut to bite-size pieces
Garlic, minced
Sea salt and freshly ground black pepper
Penne pasta, 1/2 pound
Fresh basil leaves
Grated Parmesan cheese, optional

Preheat oven to 375 degrees.

Whisk olive oil and honey together in a small bowl. Arrange tomatoes and zucchini in a baking dish large enough so they are mostly in one layer. Sprinkle minced garlic over tomatoes and zucchini. Drizzle olive oil and honey mixture over the vegetables in the dish. Sprinkle with salt and pepper. Bake in preheated oven for 30 minutes.

Cook pasta while vegetables bake. Drain pasta and dump into a large bowl. Remove vegetables from oven and pour over the pasta. Toss to coat pasta. Add torn basil leaves. Top with grated Parmesan.
