Good Food, Good Life, 365 – Asparagus with avocado dip

Asparagus with avocado dip

1 pound asparagus, rinsed and bottoms broken off

1 ripe avocado

1/2 cup fresh dill

Juice of 1 lemon

1 garlic clove

Pinch of sea salt

Place avocado, dill, lemon juice, garlic and salt in a Blender or mini food processor and blend until you obtain a smooth consistency (resist the temptation to add water to keep the flavors undiluted and the consistency firm).

Scrape dip into a clear glass bowl. Place all of asparagus, with tips up, in the dip, so that it looks like a little forest of asparagus. Refrigerate 15 to 30 minutes before serving.
