Roasted Cabbage with Honey Caraway Glaze
1 fresh cabbage
Olive oil
1 tablespoon honey
1/2 teaspoon caraway seeds, ground
Salt and pepper
Preheat oven to 500 degrees.
Slice off the stem end of the cabbage, leaving just enough to hold the leaves together. Cut from top to bottom, forming 2 slices about 1-inch thick.
Pour just enough olive oil into a cast-iron skillet or shallow baking pan to coat the bottom. Lay cabbage slices in the oil, turning them so that both sides are coated with oil. Sprinkle with salt and pepper. Place skillet in preheated 500-degree oven. Roast for 10 to 12 minutes.
While cabbage slices are roasting, whisk 1 tablespoon of olive oil with 1 tablespoon of honey and the ground caraway seeds.
Remove pan from oven. With a spatula, carefully flip each cabbage slice over. Brush with honey mixture. Sprinkle with more salt and pepper. Return to oven and continue to roast for 10 to 12 minutes. Cabbage will be golden and slightly tender. Serve hot. Depending on size of cabbage, each slice should make 2 servings, 4 servings from 2 slices of roasted cabbage.

This cabbage is a good accompaniment to meat loaf and mashed potatoes.
